Chef Gerry joins Viceroy Bali following a distinguished three-year tenure as Executive Chef at\nNIHI Sumba, the world-renowned resort recently awarded Three MICHELIN Keys and ranked\n#10 in The World\u2019s 50 Best Hotels 2024. During his time at NIHI, Chef Gerry led the resort\u2019s\nculinary programme with a strong focus on sustainability, locality and innovation, creating\nmemorable dining experiences. His leadership helped reinforce NIHI\u2019s position as one of the\nworld\u2019s most exceptional barefoot-luxury resorts.<\/p>\n\n\n

A graduate of the Bandung Tourism Institute, Chef Gerry brings over 15 years of international\nculinary experience across Indonesia, Dubai and the Maldives. His dedication to culinary\nexcellence has earned him numerous accolades, including a Gold Medal at the Hotel Asia Maldives\nExhibition and International Culinary Challenge, a Silver Medal at the Horeca Kuwait Salon, and\nmultiple honours at SIAL Abu Dhabi.\n<\/p>\n\n\n\n

At CasCades Restaurant, Chef Gerry will introduce a refreshed culinary direction that celebrates\nmodern Indonesian cuisine while embracing global influences. His menus will highlight the finest\nlocal produce and seasonal ingredients, presented with creativity and precision. Driven by his\npassion for clean, honest and comforting food, he aims to craft dishes that are refined yet deeply\nrooted in Indonesian identity, a hallmark of his philosophy of storytelling through food.<\/p>\n\n\n\n

Beyond the kitchen, Chef Gerry is known for his warm personality and genuine care for those around him. With what his colleagues fondly call a \u201cchiropractor\u2019s touch\u201d, he often helps ease the occasional sprain or strain among team members.
